This thesis explores the growing role of ultra-processed foods (UPFs) in modern diets, highlighting possible implications for human health. The work is structured into six chapters, each of which delves into the most recent scientific literature. After having defined and classified UPFs according to the NOVA system, the thesis examines their nutritional and technological characteristics, with particular focus on their effects on metabolic, cardiovascular, mental health and the gut microbiota. At the same time, it addresses the scientific debate regarding the reliability of the NOVA system and the importance of assessing UPFs not only by their degree of processing, but also by their overall dietary context. Furthermore, it analyzes the role of food processing technologies, evaluating their nutritional impact and potential areas for improvement. The aim of the thesis is to offer a clear and balanced overview of the topic and to contribute to greater food awareness, encouraging more informed and sustainable choices for individual and collective health.
L'elaborato esplora il ruolo crescente degli alimenti ultra-processati (UPF) all’interno delle diete moderne, mettendo in luce le possibili implicazioni per la salute umana. La tesi si sviluppa attraverso sei capitoli nei quali viene approfondita la letteratura scientifica recente. Dopo aver definito e classificato gli UPF secondo il sistema NOVA, si approfondiscono le loro caratteristiche nutrizionali e tecnologiche, con particolare attenzione agli effetti sulla salute metabolica, cardiovascolare, mentale e sul microbiota intestinale. Allo stesso tempo, viene trattato il dibattito scientifico sull’affidabilità del sistema NOVA e sulla necessità di valutare gli UPF non solo in base al grado di trasformazione, ma anche al loro contesto dietetico complessivo. Inoltre, viene analizzato il ruolo delle tecnologie di trasformazione alimentare, valutandone l’impatto nutrizionale e le potenziali prospettive di miglioramento. L’obiettivo della tesi è quello di offrire una panoramica chiara e bilanciata sul tema e contribuire a una maggiore consapevolezza alimentare, promuovendo scelte più informate e sostenibili per la salute individuale e collettiva.
