The greater sensitivity of the population towards the environmental impacts of anthropogenic activities and the objective need to mitigate them, have transformed, over the course of a few decades, organic farming, previously practiced in a fragmented way by a few producers who were refractory to the exploitation of resources, to a recognized and shared system, defined by rigid regulations subjected to certification. In Europe the organic method, in the course of its evolutions, has also incorporated livestock productions, including specific techniques for the breeding of aquatic organisms. However, organic aquaculture, unlike other productions of this type, is encountering many obstacles in its affirmation, so that research programs and initiatives aimed at its diffusion are dedicated to it. Among the problems that emerge from the studies of the sector, the consumers lack of knowledge of organic aquaculture products stands out, as they are easily confused with sustainable fishery products or similar, and, consequently, the purchasers do not reward the offer, making it difficult for producers to cover the higher production costs. Valliculture is an extensive method of capturing and fattening euryhaline species within lagoon lakes and due to its characteristics it appears naturally inclined to organic production. The operators in the fishing valleys sector who intervened directly complain that the certification legislation does not really guarantee added value and is linked to compliance with bureaucratic requirements that are not suitable for enhancing the products entering the market.
La maggiore sensibilità della popolazione verso gli impatti ambientali delle attività antropiche e l’oggettiva necessità di mitigarli, hanno trasformato, nel corso di qualche decennio, l’agricoltura biologica, prima praticata in modo frammentario da pochi produttori refrattari allo sfruttamento delle risorse, ad un sistema riconosciuto e condiviso, definito da rigide normative sottoposte a certificazione. In Europa il metodo biologico, nel corso delle sue evoluzioni, ha inglobato anche le produzioni zootecniche, inserendo fra queste anche specifiche tecniche per l’allevamento degli organismi acquatici. L’acquacoltura biologica però, diversamente dalle altre produzioni di questo tipo, sta incontrando molteplici ostacoli nel suo affermarsi, tanto che le vengono dedicati programmi di ricerca e iniziative finalizzate alla sua diffusione. Tra le problematiche che emergono dagli studi del settore, spicca la scarsa conoscenza che il consumatore ha per i prodotti di acquacoltura biologica, che è facilmente confusa con prodotti da pesca sostenibile o similari, e, di conseguenza, non premia l’offerta, rendendo difficile ai produttori coprire i maggiori costi di produzione. La vallicoltura è un metodo estensivo di cattura e ingrasso di specie eurialine all’interno di laghi lagunari e, per le sue caratteristiche, appare naturalmente incline alle produzioni biologiche. Gli operatori del settore delle valli da pesca intervenuti direttamente lamentano tuttavia che la normativa di certificazione non garantisce davvero un valore aggiunto ed è legata al rispetto di adempimenti burocratici poco idonei a valorizzare i prodotti in fase di immissione sul mercato.
