LA CARNE SINTETICA E LA FARINA DI INSETTO, NUOVI ALIMENTI COME POSSIBILE SCELTA ALTERNATIVA AGLI ANIMALI DA MACELLO. COSA NE PENSA IL CONSUMATORE?

Novel Foods, such as foods with insect meal and synthetic meat, have received particular attention in the last period, both in a positive and negative way. After the latest declarations of the Italian state which has pronounced itself against synthetic foods and the European Union which has introduced new regulations in this regard, Novel Foods have been among the protagonists of this beginning of 2023. In fact, the thesis deals with the main characteristics of the new foods that are entering the market and analyzes their pros and cons, also taking into consideration the consumer's neophobia and the role that the credibility of retailers plays in the trade of these innovations in the food sector. The point of view of the consumer is important, which is taken into consideration through a questionnaire that was proposed to a sample of people. The questionnaire aims to make it clear that the final consumer prefers between insect meal-based foods and synthetic meat. The sample of people tends to choose what is closest to what they eat every day, therefore initially expresses a preference for synthetic meat, only to change their mind when part of the production process is explained.

I Novel Foods, come gli alimenti con farina di insetto e la carne sintetica, nell’ultimo periodo sono stati particolarmente frutto di attenzioni, sia in modo positivo che negativo. Dopo le ultime dichiarazioni dello stato italiano che si è pronunciato contro gli alimenti sintetici e l’Unione Europea che ha introdotto nuove regolamentazioni a riguardo, i Novel Foods sono stati tra i protagonisti di questo inizio 2023. La tesi infatti tratta le principali caratteristiche dei nuovi alimenti che stanno entrando nel mercato e ne analizza i pro e i contro, tenendo in considerazione anche la neofobia del consumatore e il ruolo che gioca la credibilità dei rivenditori nel commercio di queste novità in ambito alimentare. Importante è il punto di vista del consumatore, che viene preso in considerazione tramite un questionario che è stato proposto ad un campione di persone. Il questionario vuole far capire la preferenza da parte del consumatore finale nell’acquisto tra alimenti a base di farina di insetto e la carne sintetica. Il campione di persone tende a scegliere ciò che è più simile a quello che si mangia tutti i giorni, quindi inizialmente esprime una preferenza per la carne sintetica, per poi ricredersi quando ne viene spiegato parte del processo produttivo.
