In our country, shellfish are one of the most valued and consumed foods, especially if they are bivalves, and the largest producers are the regions of Veneto and Emilia-Romagna, overlooking the Adriatic Sea. However, it is important to pay attention to how they are produced, consumed and the possible problems that can loom once they are ingested. In fact, there are particular production and purification areas, where these are kept before entering the market, and particular analyses carried out, so as to ensure the safety and health of consumers. In recent years, however, in addition to the microbiological risk, a new hazard has also been discovered concerning them: tetrodotoxin. A toxin derived from the Pacific Ocean, much more toxic than cyanide and usually found in other animal species, probably arrived with commercial trade. There is no EU regulation yet, so EFSA is doing further studies on this, including identifying different detection methods to monitor contamination of bivalves. All of this is to set legal limits for marketing, and keep the intake of these foods, safe for consumers.
Nel nostro paese i molluschi rappresentano uno dei cibi più apprezzati e consumati, soprattutto se bivalvi, e i maggiori produttori sono le regioni Veneto ed Emilia-Romagna, affacciate sul Mare Adriatico. È importante però prestare attenzione a come vengono prodotti, consumati e alle possibili problematiche che possono incombere una volta ingeriti. Esistono infatti particolari zone di produzione e di depurazione, in cui questi vengono tenuti prima di entrare in commercio, e particolari analisi svolte, in modo da garantire la sicurezza e la salute dei consumatori. Negli ultimi anni, tuttavia, oltre al rischio microbiologico, è stato scoperto anche un nuovo pericolo che li riguarda: la tetrodotossina. Una tossina derivante dall’Oceano Pacifico, molto più tossica del cianuro e solitamente ritrovata in altre specie animali, arrivata probabilmente con i traffici commerciali. Non esiste ancora alcun regolamento comunitario, per questo l’EFSA sta svolgendo ulteriori studi a riguardo, identificando anche diverse metodiche di rilevamento per monitorare la contaminazione dei bivalvi. Tutto questo per definire dei limiti di legge per la commercializzazione, e mantenere l’assunzione di questi alimenti, sicura per i consumatori.
