USO DI METANOLO A SCOPO ILLECITO NELLA PRODUZIONE DELLE BEVANDE ALCOLICHE. CONSEGUENZE SANITARIE ED ECONOMICHE

The purpose of the thesis is to analyze methanol poisoning used for illicit purposes in the production of alcoholic beverages, understanding the characteristics of methanol, its toxicity, and its effects on the human body. The most common food frauds are examined, highlighting the associated economic and reputational effects, studying methods for detecting and analyzing methanol in food substances, as well as regulations, prevention measures, and strategies to counter fraud in order to promote food safety.

Lo scopo della tesi è analizzare l'avvelenamento da metanolo utilizzato a scopi illeciti nella produzione delle bevande alcoliche comprendendo le caratteristiche del metanolo, la sua tossicità e gli effetti sul corpo umano. Vengono esaminate le frodi alimentari più comuni evidenziando gli effetti economici e reputazionali associati studiando i metodi di rilevazione e analisi del metanolo nelle sostanze alimentari, nonché le regolamentazioni, le misure di prevenzione e le strategie per contrastare le frodi al fine di promuovere la sicurezza alimentare.
