The steady increase in the consumption of dairy products has led, not only to an expansion of the offerings on the shelves, but moreover has stimulated researches for new technologies that allow the increase in food production without damaging the quality, focusing on the creation of palatable, healthy, safe and minimally processed foods. The search for such alternative processes has driven attention to emerging food technologies such as non-thermal technologies, to avoid altering the flavour, the color or the nutritional content of foods during production. Low- and high-intensity ultrasounds are among these technologies. Low-intensity ultrasounds have been used to determine, analyze and characterize the physical characteristics of foods, while high-intensity ultrasounds are applied to accelerate particular biological, physical and chemical processes during food product handling and transformation. Ultrasound technology offers a great potential to control, improve, and accelerate processes without damaging the quality of food and other products. Hence, ultrasound applications in the food industry including the dairy industry continue to be subject of research.
Il costante incremento del consumo di prodotti lattiero caseari ha portato, non solo ad un ampliamento dell’offerta tra gli scaffali, ma per di più ha stimolato la ricerca di nuove tecnologie produttive che permettano un aumento della produzione di alimenti senza diminuirne la qualità, focalizzandosi sulla creazione di cibi appetibili, sani, sicuri e minimamente processati. La ricerca di tali processi alternativi ha attirato l’attenzione sulle tecnologie non termiche, per evitare di alterare il contenuto nutrizionale, il sapore o il colore degli alimenti durante la produzione. Gli ultrasuoni a bassa e alta intensità sono compresi tra queste tecnologie innovative. Gli ultrasuoni a bassa intensità possono essere utilizzati per determinare e analizzare le caratteristiche fisiche degli alimenti, mentre gli ultrasuoni ad alta intensità possono essere applicati per accelerare particolari processi biologici, fisici e chimici durante la produzione e trasformazione degli stessi. La tecnologia ad ultrasuoni offre un grande potenziale per controllare, migliorare e accelerare i processi senza danneggiare la qualità degli alimenti e di altri prodotti. Pertanto, le applicazioni degli ultrasuoni nell'industria alimentare, compresa l'industria lattiero-casearia, continuano ad essere oggetto di ricerca.
