In this thesis, I will analyse the history and evolution of video recipes from the invention of television to modern days and social media. To do so, I will start with an introduction to recipes and Italian recipe books and the type of gastronomical communication they offer, then will begin the part about the birth of Italian television by analysing a program called “Viaggio nella valle del Po” by Mario Soldati with a focus on the gastronomic side of the program and the analysis of a particular recipe. Furthermore, it will also analyse the American counterpart which is a program called “The French Chef” starring Julia Child, an American journalist and chef, here too analysing the communicative style of a specific recipe. Subsequently, I will discuss some television programs, both Italian and English-speaking ones, from which i will analyse some recipes, the communication model and their differences. Finally, in the last part of this thesis, I will analyse some social media channels and their impact on gastronomic communication in recent years, analyzing some video recipes.
In questa tesi verrà analizzata la storia e l’evoluzione della video ricetta dall’invenzione della televisione fino ad arrivare ai giorni nostri con i social media. Per fare ciò si partirà con un’introduzione sulla ricetta e i ricettari italiani e sulla comunicazione gastronomica che offrono, poi si avvierà la parte sulla nascita della televisione in Italia con l’analisi del programma “Viaggio nella valle del Po” di Mario Soldati con un focus sulla parte gastronomica del programma e l’analisi di una ricetta, si analizzerà poi la controparte statunitense con il programma “The French Chef” di Julia Child, scrittrice e cuoca americana, anche qui analizzando lo stile comunicativo di una ricetta. Successivamente si tratterà di alcuni programmi televisivi, sia italiani sia di lingua inglese di cui verranno analizzate alcune ricette e il modello comunicativo e le loro differenze. Infine, nell’ultima parte di questa tesi verranno analizzati alcuni canali social e il loro impatto nella comunicazione gastronomica degli ultimi anni, prendendo in analisi alcune video ricette.
