Waxy is a special variety of corn characterized by the presence of starch that is completely or almost completely made of amylopectin. Due to its own unique properties and multiple applications, It is drawing the interest in the food industry. This work aims to examine the composition of waxy corn by comparing it with the conventional one and analyzing the advantages of its use in the food industry. After a general overview of the traditional corn, the focus will be shifted to the key characteristics of waxy corn, analyzing its various applications in the food industry and highlighting the advantages that it offers in terms of texture, retrogradation properties and shelf life. The final part of this work will be related to the analysis of the project developed in a company of the food sector, with special attentions to the steps done in order to study and implement waxy corn in one of the company new products. The aforementioned case study will offer a practical perspective on the application of waxy corn in food industry.
Il mais waxy, una varietà speciale di mais caratterizzata dalla presenza di amido completamente o quasi completamente composto da amilopectina, sta suscitando un crescente interesse nel campo alimentare per le sue proprietà uniche e le sue molteplici applicazioni. Questo elaborato si propone di esaminare la composizione del mais waxy confrontandola con quella del mais tradizionale, analizzando i vantaggi derivanti dal suo utilizzo nell’industria alimentare. In primo luogo, verrà affrontata una panoramica generale sul mais tradizionale e, successivamente, il focus si sposterà verso le caratteristiche chiave del mais waxy, analizzando le varie applicazioni nel settore alimentare ed evidenziando i vantaggi che offre in termini di texture, proprietà di retrogradazione, shelf life. La parte finale di quest’elaborato sarà dedicata all’analisi di un progetto specifico di un’azienda del settore alimentare, evidenziando i vari passi che hanno portato allo studio e all’utilizzo di questo specifico mais in uno dei nuovi prodotti commercializzati dall’azienda. Questo caso studio offrirà una prospettiva pratica sull’applicazione del waxy in campo alimentare.
