In the oenological sector, the sizing of tanks and the possible problems they might lead to have always been a challenge for wine producers. The necessity to expand and process increasing volumes of grapes has forced small medium-sized wineries to adapt to this change of direction. The birth of new technologies and the introduction of wine tanks of various materials and sizes have helped these companies to better meet the new needs dictated by fashion and the wine market itself. In this paper, qualitative interviews were conducted with five wine companies located between the Euganean Hills and the Berici Hills in the provinces of Padua and Vicenza, respectively. These meetings highlighted the challenges that these wineries have been forced to face over the years, such as the space available for winemaking, the volumes of wine vessels and logistical problems. The results pointed out how each reality adapted as best it could to these new challenges while maintaining the quality of the finished product and promoting the local wines.
Nel settore enologico il dimensionamento delle vasche e le possibili problematiche connesse sono sempre stati una sfida per i produttori di vino. La necessità di espandersi e di lavorare volumi sempre più elevati di uva ha costretto le medie-piccole aziende vitivinicole ad adattarsi a questo cambio di rotta. La nascita di nuove tecnologie e vasi vinari di svariati materiali e dimensioni hanno aiutato queste realtà a superare al meglio le nuove esigenze dettate dalla moda e dal mercato enologico. In questo elaborato sono state effettuate delle interviste di tipo qualitativo a cinque aziende situate tra i Colli Euganei ed i Colli Berici, rispettivamente nelle province di Padova e Vicenza. In questi incontri sono state messe in luce le sfide che queste cantine sono state costrette ad affrontare negli anni, legate per esempio allo spazio disponibile per la vinificazione, ai volumi dei vasi vinari ed alla logistica. I risultati hanno evidenziato come ogni realtà si sia adattata come meglio ha potuto a queste nuove sfide, mantenendo la qualità del prodotto finito e valorizzando i vini del territorio.
