This paper aims to thoroughly address celiac disease and food product labeling, with a specific focus on the doubts and concerns of celiac patients when purchasing and consuming such products available on the market. Initially, a detailed overview of celiac disease will be provided, examining its causes, clinical symptoms, and current treatment methods. This introductory section will serve to contextualize the issue and provide the foundation for understanding the importance of clear and accurate labeling. Subsequently, the current norms and regulations regarding the labeling of gluten-free products will be illustrated. In particular, the issue of cross-contamination will be analyzed, and how this phenomenon can lead companies to use unclear or ambiguous statements on product packaging. An important section of the paper will be dedicated to analyzing the data and statistics collected through a questionnaire administered to celiac patients. The aim of this questionnaire is to verify how celiacs do their shopping and how they read and interpret the labels of the products they purchase, highlighting any difficulties and uncertainties encountered. Finally, a section will be dedicated to the Italian Celiac Association (AIC), describing the crucial role this organization plays in daily support for celiac patients, offering help and practical advice even during shopping. Therefore, this paper aims to provide a comprehensive and detailed view of the challenges faced by celiac patients in the context of their shopping, with particular attention to the importance of clear and precise labeling to ensure consumer safety and peace of mind.
Il presente elaborato si propone di trattare in modo approfondito la celiachia e le etichettature dei prodotti alimentari, con un focus specifico sui dubbi e le preoccupazioni dei pazienti celiaci nell’acquisto e nel consumo di tali prodotti disponibili sul mercato. Inizialmente, verrà fornita una panoramica dettagliata sulla celiachia, esaminando le cause, i sintomi clinici e le modalità di cura attualmente disponibili. Questa sezione introduttiva servirà a contestualizzare il problema e a fornire le basi per comprendere l’importanza di un’etichettatura chiara e accurata. Successivamente, verranno illustrate le norme e i regolamenti vigenti riguardanti l’etichettatura dei prodotti che riportano la dicitura senza glutine. In particolare, verrà analizzato il tema della contaminazione crociata e come questo fenomeno possa portare le aziende a utilizzare diciture poco chiare o ambigue sulle confezioni dei prodotti. Un’importante sezione dell’elaborato sarà dedicata all’analisi dei dati e delle statistiche raccolte attraverso un questionario somministrato ai pazienti celiaci. L’obiettivo di questo questionario è verificare come i celiaci svolgono la spesa e come leggono e interpretano le etichette dei prodotti che acquistano, evidenziando eventuali difficoltà e incertezze riscontrate. Infine, verrà dedicata una sezione all’Associazione Italiana Celiachia (AIC), descrivendo il ruolo cruciale che questa organizzazione svolge nel supporto quotidiano ai pazienti celiaci, offrendo aiuto e consigli pratici anche durante la spesa. Questo elaborato mira, dunque, a fornire una visione completa e dettagliata delle sfide affrontate dai pazienti celiaci nel contesto della loro spesa, ponendo particolare attenzione all’importanza di un’etichettatura chiara e precisa per garantire la sicurezza e la tranquillità del consumatore.
