Le farine di insetti: una fonte di proteine alternativa e sostenibile

Why could insects rapresent an effective soluction to counter the increasing world demand of animal source proteins? The reasons why the modern agro-food system in not actually sustainable and the main negative effects about the intensive farming are described in this paper. The resulting benefits of incorporation insects meal inside of humans and animals food and feed are listed, and six different products will be analyzed to evaluate their organolectic, nutritional and structural characteristic. The main reasons that affects the consumer choices will be described, using a survey created by me, in order to understand what are the most widespreads opinions about this theme.

Perché gli insetti potrebbero rappresentare una soluzione efficace per contrastare l’aumento della domanda mondiale di proteine di origine animale? In questo elaborato sono descritti i motivi per cui il sistema agro-alimentare moderno non è sostenibile e i principali effetti negativi dell’allevamento intensivo nell’ambiente. Sono elencati i vantaggi derivanti dall’aggiunta di farine di insetti all’interno di prodotti ad uso umano e zootecnico, e verranno analizzati sei prodotti diversi e valutate le loro caratteristiche organolettiche, nutrizionali, e strutturali. Verranno descritti i principali motivi che incidono sulle scelte da parte del consumatore, anche grazie ad un sondaggio da me realizzato, in modo da poter capire quali siano le opinioni più comuni in merito alla tematica.
