The goal is to understand how historical techniques, reinterpreted in light of current environmental, economic, and social needs, can contribute to more sustainable innovative models. This analysis aims to highlight how retrovation is not a simple rediscovery of the past, but rather an approach to addressing modern challenges while simultaneously producing products with added value in terms of quality and uniqueness, integrating tradition and innovation.

In tempi moderni si ha la necessità di portare il settore vitivinicolo verso la sostenibilità attraverso innovazioni che siano coerenti con le necessità dei nostri giorni. Questa tesi analizza il ruolo delle innovazioni sostenibili che siano legate in modo diretto e indiretto a pratiche storiche nel settore vitivinicolo, attraverso una selezione di articoli scientifici e casi studio. L’obiettivo è quello di comprendere come le tecniche del passato, reinterpretate alla luce delle attuali esigenze ambientali, economiche e sociali, possano contribuire a modelli innovativi più sostenibili.
