Food safety and hygiene control represent a crucial priority for the protection of public health and the quality of products throughout the entire food chain. An effective management system is essential to prevent risks, strengthen consumer confidence, and promote the sustainability of the agri-food sector. In this context, HACCP (Hazard Analysis and Critical Control Points) is a central tool for identifying, assessing, and controlling hygiene-related hazards in food. In recent years, technological innovation and the development of artificial intelligence (AI) have opened new perspectives for making this system more efficient and effective, thanks to tools capable of supporting the monitoring of critical control points, data analysis, and risk prediction. The integration of AI into the HACCP system helps reduce human error, prevent food safety issues, and ensure higher hygiene standards.
La sicurezza alimentare e il controllo igienico rappresentano una priorità cruciale per la tutela della salute pubblica e la qualità dei prodotti lungo l’intera filiera alimentare. Un sistema di gestione efficace è indispensabile per prevenire rischi, rafforzare la fiducia dei consumatori e promuovere la sostenibilità del settore agroalimentare. In questo contesto, l’HACCP (Hazard Analysis and Critical Control Points) costituisce uno strumento centrale per identificare, valutare e controllare i pericoli igienico-sanitari negli alimenti. Negli ultimi anni, l’innovazione tecnologica e lo sviluppo dell’intelligenza artificiale (IA) hanno aperto nuove prospettive per rendere questo sistema ancora più efficiente ed efficace, grazie a strumenti in grado di supportare il monitoraggio dei punti critici di controllo, l’analisi dei dati e la previsione dei rischi. L’integrazione dell’IA nel sistema HACCP contribuisce a ridurre l’errore umano, prevenire fenomeni di insicurezza alimentare e garantire condizioni igieniche più elevate.
