Today you can find raw milk in the stable not only directly but also in special vending machines located in public places outdoors. Distributors must have certain requirements described in the Understanding State and the Regions of the 25th January 2007, must also comply with a Ministerial Order issued on the 9th December 2008 because of some cases of HUS due to the consumption of raw milk. It has been done study on the consumption of raw milk in some municipalities of the north-east of the Colli Euganei. Questionnaires have been proposed in order to investigate the salient characteristics of consumers of raw milk in order to highlight what criteria push the purchase and whether consumers possess the fundamental knowledge about good hygiene practices on the use, about the possible health risks and about some conservation concepts.
